February Burger of the Month

Valentine's Day is just around the corner! How will you be celebrating? Avoid the crowds and consider a night-in (check-out all of the reasons I love a good night-in here). 
 
Here's a deliciously romantic burger idea that you can leisurely throw together while you enjoy a pre-dinner drink with your Valentine. They will swoon over this SWEET chili burger and marvel at your grilling skills. Grab a bottle of your date's favorite cabernet. This burger is great with a hearty glass of wine.

Celebrating with pals? Awesome! This burger is fun and impressive no matter who pulls up to your table this month. Plus, it's simple to make for a crowd.

Sweetheart Chili BUrgeR

Ingredients
  • 1 Purple Onion
  • Butter, 2 Tbs.
  • Salt 
  • Ground Beef, 2 lbs.
  • Fruit & Pepper Jelly
  • Diced Green Chilis, 4 oz
  • Brioche Buns, 6
  • Whipped Cream Cheese, 4 oz
Directions
  1. Caramelize the onions. Heat butter in a medium skillet. Add the onions and toss with melted butter. Place a lid on the skillet and cook over medium-low heat for about 10 minutes to sweat the onion. Remove the lid and continue to cook over medium-low heat for 20-25 minutes, stirring occasionally, until onions are caramelized. If the onions are cooking too quickly, lower the heat. Salt the onions and cook for two more minutes. 
  2. Meanwhile, build a charcoal fire or heat a gas grill.
  3. Place the ground beef and chilis in a large bowl and salt and pepper to taste. Mix to combine. Form patties of equal size and thickness.
  4. When the grill is hot, place the burgers on the grill and cook for 8 minutes. Flip the burgers and continue to cook for another 6-8 minutes or until they reach medium (note: cooking times may vary depending on temperature of grill). Let the burgers rest during assembly.
  5. While the burgers cook, combine the cream cheese and jam for the sauce.  
  6. Assemble the burgers. Spread the creamy sweetheart sauce on the bun, add the burger, and top with caramelized onions. Serve piping hot to your Valentine!
