Beefy Queso

This Sunday is Super Bowl LIV. What will be on your party table? I haven't finished our menu just yet, but one thing I know will be there is this Beefy Queso using 1 Source ground beef!

My sister is a party planning master, and she created this recipe for a gathering over the holidays. When she shared it with me, I immediately knew I wanted to try it for the Super Bowl! However, this is not your average sporting event "cheese dip." Yeah, it includes some traditional ingredients and throwing those ingredients into a crockpot. The flavor, though, is amped up by American Black Angus beef and is completely out of this world.
It's truly amazing how long-time classics get seriously upgraded when you use high-quality ingredients like the gourmet blend of 1 Source ground beef. You'll "wow" your football fanatic friends and family this Sunday when you walk in with a steaming pot full of this Beefy Queso - especially when they were expecting a run-of-the-mill cheese dip. This will become your new favorite for football gatherings, holiday parties, impromptu get-togethers, or really any excuse to enjoy some beefy, cheesy goodness!

  • 1 Tbs. butter
  • 1 small yellow onion, diced
  • 1 lb. 1 Source ground beef
  • 1 (5.5 oz) can vegetable juice
  • 1 (1 oz.) packet taco seasoning
  • 1 (32 oz.) block Velveeta Queso Blanco
  • 1 (16 oz.) block Velveeta Queso Blanco
  • 1 (8 oz.) block cream cheese
  • 2 (10 oz.) cans Ro-tel,drained
  • Milk (if needed)
  1. In a medium skillet over medium heat, melt butter. Add diced onion and cook until translucent, about five minutes. Add ground beef and brown, crumbling with a spoon (about 8-10 minutes or until meat is browned and cooked through).
  2. Combine vegetable juice and taco seasoning. Pour over beef mixture. Reduce heat to low and simmer until thick, about five minutes. 
  3. Turn slow cooker to high. While the sauce thickens, add Velveeta, cream cheese and Ro-tel to begin melting. Add beef mixture and stir to combine. Cover, stirring occasionally to prevent burning. Add milk if needed to thin out the queso. Cook 25-30 minutes or until melty and gooey. 
  4. Serve and enjoy!
